Last week I scoured the internet looking for a new twist for my red wine reduction sauce (is there anyone who doesn’t love Pinterest?), and in the search results were some delicious looking dessert sauces that completely changed the course of my meal that night…well, the dessert course, anyway!
Always up for a new culinary challenge – especially when there’s wine involved – I made a dessert using one of the recipes I’d found online. I mainly chose it because I already had all of the necessary ingredients on hand, but I’m really glad I did!
I don’t claim ownership of this recipe – I’m sharing a Sprinkle Bakes blog post here – but being a huge fan of anything coconut (and wine), this Coconut Panna Cotta with Berries and Red Wine Reduction went straight onto my Desserts board! Instead of “regular” wine, I used Ruby Port, which I always have on hand this time of year for holiday cooking (and evening sipping). I made another slight modification by using coconut cream in place of the heavy cream, which made a delectable, dairy-free dessert with an even more bumped up coconut flavor.
Having had such success with a red wine sauce, I decided to dig around for new white wine dessert recipes to try. It was much harder to find an elegant dessert made with white – they seem to lend more to savory sauces – although if you want to make white wine jello shots, I know just where to look!
What I ended up doing was adapting a delicious recipe for Dulce de Leche Custard with Port Wine Meringue from Veronica at Down Cakery Lane by substituting the Port with a sweet, white Italian dessert wine (Moscato).
The vintage I used, Passito di Pantelleria, is a velvety wine with a deep amber colour and intense aromas of dried figs, apricot and dates. In the mouth, it’s warm and round, honeyed and intensely sweet, so in the meringue it was absolutely heavenly. If you can’t find this particular wine, either use the port called for in the recipe or check with your local wine shop for a fitting substitute – I’m sure there are many.
